Sylvias secret lies in giving the seasons
carte blanche to dictate the bill of fare. Inspired
by the freshness of the raw materials, she then
transforms them into delicacies. Special diets
are catered for if prior notice given.
Using the very best ingredients from local suppliers
she adds the pick of the bunch of Scottish produce,
spoils and often surprises the guests with innovative
compositions. Subject to season, naturally !
